Guest guest Posted April 27, 2008 Report Share Posted April 27, 2008 This is a Rachael Ray recipe (Yum-O!) In a skillet, add EVOO ( extra virgin Olive oil) and 1 small cut up onion. Let it carmelize. Then add 2 cans (drained) of diced tomatoes, parsley, and garlic powder, plus salt and pepper to taste. In a large pot boil the entire box of ziti. When its almost done, add one bunch of asparagus. Drain and return to pot. In casserole dish, add 1/2 the tom. mixure, then all of the ziti and asparagus,( but not overflowing), the other 1/2 of tom. mix. Sprinkle with grated parmesan, then slice up FRESH mozerella and lay on top of caserole. Put into 350 degree oven for about 5 min. or until cheese is melted.
