Guest guest Posted April 27, 2008 Report Share Posted April 27, 2008 M'CHICHA East African Spinach & Peanut Relish 2 oz. butter 2 (12-oz.) packages frozen chopped spinach, thawed 1/2 cup grated coconut, unsweetened 1/2 cup peanuts, chopped finely. Salt and pepper, to taste In a 2 quart saucepan, melt butter. Add spinach, coconut and peanuts. Toss lightly until ingredients are combined, heated through, and all liquid is absorbed. Correct the Seasoning with salt and pepper.
