Hot Vidalia Onion Relish

 

1 Tbsp. vegetable oil

1 Vidalia Onion, diced

1/4 each: red and green bell pepper, diced

2 Tbsp. chopped fresh parsley

1 Tbsp. lime juice

1 tsp. chopped fresh mint

1/2 tsp. honey

1/4 tsp. each: salt and cayenne pepper

 

 

 

In a large skillet, heat oil over medium-high heat. Sauté onion and peppers

until wilted slightly and onions become translucent. Stir in cayenne pepper.

Serve warm.

 

Makes about 1 1/2 cups relish

grilled chicken, meat or pork. If you like it hot, add extra cayenne.
