Guest guest Posted April 25, 2008 Report Share Posted April 25, 2008 @@@@@ Soused Onion Relish - 1 pt, 9 g carbohydrates, 1.5 g fiber 1/3 cup golden raisins 1/3 cup Jack Daniel's Tennessee Whiskey 6 cups chopped onions 3 tablespoons oil 1 tablespoon brown sugar 1 can (14.5 ounces) diced tomatoes, drained 1/2 teaspoon thyme Black pepper and salt, to taste Combine raisins and Jack Daniel's in small bowl; set aside. Cook onions in oil in large skillet, covered over low heat until onions are tender and begin to caramelize -- about 15 minutes, stirring occasionally. Uncover and stir in brown sugar; continue cooking 5 minutes. Stir in tomatoes and raisin/Jack Daniel's mixture.Increase heat and bring to a boil. Reduce heat and simmer 10 minutes or until thickened. Season with thyme, pepper and salt. Cool and refrigerate. Serve chilled or at room temperature. Makes about 4 cups or 16 servings.
