Guest guest Posted April 24, 2008 Report Share Posted April 24, 2008 Broccoli Spears with Saucy Hummus 1 1/2 lbs. broccoli spears Saucy Hummus 1 cup canned garbanzo beans 1/2 cup plain yogurt 1 tbsp. packed fresh cilantro or parsley 1 tbsp. lime juice 1/4 tsp. salt Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add broccoli. Heat to boiling; reduce heat. Simmer 10 to 12 minutes or until stems are tender. Serve sauce over broccoli. Saucy Hummus: Place all ingredients in food processor or blender. Cover and process or blend on high until smooth. This sauce also doubles as a great appetizer dip. Serve it with whole wheat and regular pitas that have been cut into wedges.
