Guest guest Posted April 23, 2008 Report Share Posted April 23, 2008 @@@@@ Homemade Mexican Relish 6 large ripe tomatoes 6 large red peppers 6 large green peppers 4 cups celery, (about 8 stalks) 4 large onions 1/2 cup salt 2 cups vinegar 4 cups sugar 1/2 cup mustard seed Grind tomatoes, peppers, celery and onions together (meat grinder or food processor). Add salt. Let stand at least 4 hours or overnight. Drain. Mix vinegar, sugar, and mustard seed togeher. Pour over vegetables. Mix well. Put into sterilized jars. No need to seal the jar but it does need to be stored in the refrigerator.
