Guest guest Posted April 23, 2008 Report Share Posted April 23, 2008 Pesto Mayonnaise 1/4 cup lightly packed fresh basil leaves 1/4 cup lightly packed fresh spinach leaves 2 tablespoons lemon juice 2 tablespoons olive oil 1 tablespoon grated Parmesan cheese 1 tablespoon pine nuts, toasted 1 teaspoon finely chopped garlic 1/4 teaspoon salt 1/4 teaspoon pepper 1 1/2 cups mayonnaise or veganise In food processor bowl, process all ingredients except mayonnaise until smooth. Transfer basil mixture to bowl; stir in mayonnaise. Cover and refrigerate until ready to serve. Serve with French-fried potatoes or roasted potato wedges. Makes 12 servings.
