A year is great and really difficult because, as you said, you are " a picky eater " . I am not a picky eater and yet even up to my 39th-40th vegetarian year I still fight the battles related to food. First, my siblings are not vegetarian --- I am the only one! All their families aren't either. I share my food with them (sometimes even unwillingly if I don't have enough for a particular meal) because I honestly like them to like vegetarian even if they like being carnivorous. Mine is survival. In my seminar/trainings around the country, my battle was finding people who could understand that vegetarianism means a certain diet, not only meatless (Many say, " That's vegetables. Eat it! " and I couldn't because it has seafood or other things I don't eat.) I stick to my discipline because of many reasons ... I stick to those reasons as part of a lifestyle. One time, I got fat because all I could eat for a week was the desserts. My co-trainers pitied me and gave me their ice cream, pastries and other desserts so I could eat. STEPHANIE, you are doing great. To start with, choose the foods you like that conform to your being vegetarian and yet do not clash with your palate. I don't think you should be an unhappy vegetarian. What we eat becomes what we think. And being happy is why I am vegetarian --- I choose foods I like, it's a freedom and a test of will. If my fancy brings me just on fruits for the day, that's all I eat. If I don't have time to cook, I go to a vegetarian fastfood which is so near my office. Or, I visit a friend who I know cooks good vegetarian food. Try out some great recipes that use up the foods you really like. Our vegetariangroup recipes are fantastic and plenty. I can eat soyproducts FOR A WEEK, 3X daily meals, sometimes differently cooked but the same. I like a few vegetables but will try as many allowed --- experiment on a different spice, little by little. Accepting different tastes into our lives bring flavors and joys as well. I enjoy being a vegetarian very much...I am just getting burned out on the few things I know how to cook and know that I like. I am the only vegetarian in my family too - so that makes it even more of a challenge - I either have to try to find something that my carnivore fiance will like, or have to find something that i can make just for myself.
