Gypsy Japanese Adzuki Bean Salad 2 tsps. tamari or soy sauce 2 tbsps. rice wine vinegar 2 tsps. wasabi powder, or to taste 3 tbsps. canola oil 2 tbsps. dark sesame oil 1 lb. canned adzuki beans, drained (Asian market) 2 scallions, minced 1 cucumber, chopped 1/2 lb. green beans, trimmed, halved, steamed and chilled 2 cups organic salad greens mix 1 cup watercress 1 tsp. sesame seeds 1 tsp. fresh chives Combine first 5 ingredients in a bowl for the dressing. Mix in beans, scallions, cucumber and green beans. Chill. Place salad greens and watercress on serving plates. Top with bean mixture and sprinkle with sesame seeds and chives. Yields 6 servings.
