Guest guest Posted April 19, 2008 Report Share Posted April 19, 2008 Roasted Onion Mash Potatoes These are wonderful. 1 lge sweet onion, thinly sliced 2 tbsps. melted butter or olive oil (I used the butter) 2 tbsps. cider vinegar or white wine (I used the white wine) 6 medium potatoes 1 1/2 cups of milk, or unsweetened soy milk, heated not boiled 1 tsp. salt 1/4 tsp. pepper Preheat oven to 425 degrees. Line a small rimmed baking sheet with foil or spray with nonstick cooking spray. (I just spray my cast iron fry pan & used that) In a bowl, toss onion, butter and wine until coated. Spread out unto baking sheet, roast in oven until golden brown and soft, stirring occasionally. About 20 minutes. Meanwhile, peel and quarter potatoes. Cover with cold water & cook till fork tender. Drain & return to low heat for 2 minutes to dry, shaking pan occasionally. Set aside 1/3 of the roasted onions, chop remaining onions. Mash the potatoes while gradually adding the milk. (I add a couple of tbsp of butter to this as well) Stir in chopped onions, salt & pepper. Serve potatoes sprinkled with reserved onions. Be a better friend, newshound, and know-it-all with Mobile.
