Nava's Spinach Miso Pesto - 1 pt, Carbs 4g; Fiber 1g

 

4 oz baby spinach, 4-5 oz

1/4 cup fresh basil leaves

1/4 cup fresh parsley leaves

1/4 cup toasted walnuts, or pine nuts

2 scallions, green parts only, optional

2 T. miso, preferably mellow white

1 T. lemon juice

 

 

 

Combine all the ingredients in a food processor. Pulse until pureed, but with a

bit of texture remaining. Use immediately; this is best soon after its made.

 

Makes about 1 1/2 cups
