What I do is wahs and peel potatoes, carrots, parsnips, turnips, corn, etc. I toss them in oil, salt and pepper and put in a LARGE pan to roast in the oven. I stir often. Ive tried roasting at high temps, low temps. Ive tried preheating and not. Ive even tried heating up oil in the pan to be roasted and putting in the hot pan. Nothing works. I then toss all the veggies I'm going to roast with olive oil and herbs, I spread them on the sheet, roast at 425 degrees for about 45 minutes, I turn them a few times. This has always worked for me.
