Does anyone know how to make a nice Thai curry with a " light " coconut milk? I heard that coconut milk can really put the weight on and I'd like to find a version that is just as tasty but isn't as fattening. Any suggestions? Thank you and happy Spring! I've often done that and don't notice any difference- Check out our Asian Recipe Files. You'll find lots of good curry recipes in there.
