Guest guest Posted April 16, 2008 Report Share Posted April 16, 2008 Noodles and Peas 1 pound egg noodles or fettuccine 1 cup frozen petite peas, defrosted 3 tablespoons grated Parmesan cheese 2 tablespoons extra-virgin olive oil 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 1/2 cup cooking water from the pasta Bring 3 to 4 quarts of water to a boil in a large pot. Add pasta and boil until tender. Defrost peas in a strainer. Place in a large serving bowl with cheese, oil, salt and pepper. When the pasta is cooked, remove cup of the cooking liquid and add to the bowl with the peas. Drain the pasta and add to bowl. Toss well and serve immediately. Makes 4 servings.
