Blueberry Cobbler 1 pint blueberries 1/3 cup water 1 cup sugar 1 teaspoon grated lemon rind 1 cup flour 1/4 cup brown sugar 1 teaspoon baking powder 1-1/2 tablespoons cinnamon 1/3 cup butter or marg. Preheat oven to 350 degrees. Combine blueberries, 3/4 cup white sugar, water, and lemon rind in a sauce pan. Bring to boil and simmer for 2 minutes, pour into a greased baking dish, I use a medium sized glass square 8 X 8 dish. Meanwhile, combine reserved 1/4 cup white sugar with brown sugar, flour, baking powder, and cinnamon. Cut in butter into dry ingredients until mixture is crumbly. Sprinkle crumbs over blueberry mixture. Bake approximately 25 minutes or until top is brown. Serve warm with vanilla ice cream or eat it like it is..
