Spelt Bran Raisin Muffins

 

1 1/2 cups bran cereal flakes

1 1/4 cups milk or soy milk

1/3 cup maple syrup

1/4 lb. soft tofu, drained and puréed or 1 egg, beaten

1/4 cup applesauce

2 tbsps. canola oil

1 1/4 cups spelt flour

2 tsps. baking powder, non aluminum

1 tsp. ground cinnamon

1/4 tsp. ground cloves

1/4 tsp. salt

1/2 cup raisins

1/2 cup pecan pieces

 

Preheat oven to temperature 400 degrees. Combine first 6 ingredients in a

bowl. Beat well to combine. Combine next 5 ingredients in a

separate bowl. Mix thoroughly. Stir in raisins. Gradually stir

liquid ingredients into dry mixture, until just combined. Mix in

nuts. Pour into muffin tins lined with paper muffin cups or in oiled

muffin tins. Bake 20 to 25 minutes, or until puffed and cooked

through. Yuelds 12 muffins.
