Zucchini Appetizer

 

1 5 or 6 inch zucchini per person, sliced in rounds 1/4 inch thick

grated parmeson cheese

breadcrumbs

red wine vinegar, excellent quality

sea salt

olive oil

1 clove garlic

 

Put vinegar in the bottom of a serving platter.

Peel garlic clove and put with oil in the bottom of a frying pan.

Fry zucchini until browned on both sides.

Remove garlic when it turns brown. Layer zucchini in the bottom of the serving

platter.

Sprinkle with grated cheese, bread crumbs, and vinegar and a little salt. Repeat

layers.

Sprinkle bread crumbs on top.

Refrigerate 2 hours and serve with slices of Sour dough French bread or other

crusty bread.
