I like to do things in batches to make it easier. For example, we cooked three pounds of ground beef the other night. One pound went right into a meaty lasagna for my hubby, while I also assembled a plainer, cheesy version of the lasagna for myself. The second pound was made into spaghetti sauce and frozen. When the hubby has spaghetti, I just cook lots of noodles and put something else with my noodles, like broccoli, or just add plain sauce and eat it that way along with a big salad. The third pound of meat was made into taco mix and frozen in individual serving sizes. This way, my hubby can pull one of those out if he is working lots of hours and I am not around much. Sometimes, I will make big batches of rice and veggies and then freeze servings. These come in handy for nights when the hubby has a meal planned and I do not. If I am in a pinch for a meal, I nuke some steamfresh veggies and eat them with a hunk of whole wheat bread, make whole wheat couscous (really quick!) or heat up leftover rice. Then, I just have some fruit or a salad on the side and I'm happy.
