You can use all yellow cornmeal if you want.

Iron Skillet Buttermilk Cornbread

 

2/3 cup flour

2/3 cup yellow cornmeal

2/3 cup white cornmeal

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons sugar

2 eggs, slightly beaten

2 cups buttermilk

3 tablespoons melted butter

2 teaspoons vegetable oil for iron skillet

 

Mix dry ingredients. Add eggs, buttermilk, and butter.

Mix well. Heat oil in cast-iron skillet. Pour batter

into hot skillet and bake at 400 degrees for 25 to 30

minutes or until golden brown. Serves 8.
