Avocadp Pie repost

 

Avocado Pie

 

1 1/2 cups Mexican salsa in mild,medium or hot

2 large ripe avocados

1 envelope of ranch style dressing mix

2 teaspoons of lemon juice

1/2 cup sour cream

1/2 cup mayonnaise

1 bunch of green onions chopped, include the tops

1 4 ounce can of chopped black olives

1 cup shredded Jack cheese

1/4 cup chopped cilantro or parsley

Tortilla chips for serving

 

Place salsa in a colander to drain.

Cut avocados in half and remove pits, scoop avocados into medium

bowl. Mash with a fork until fairly smooth. Add ranch dressing mix

and lemon juice and stir to blend well.

In a small bowl mix sour cream and mayo.

To assemble, spread mashed avocado on bottom of an 8 inch glass pie

plate.

With a spatula, cover evenly with sour cream mixture. Spread drained

salsa over the sour cream mixture. Cover with green onions, then

chopped olives, then Jack cheese. Sprinkle cilantro or parsley over

top.

Refrigerator one hour or more before serving.

Serve with a bowl of tortilla chips.
