Guest guest Posted April 10, 2008 Report Share Posted April 10, 2008 @@@@@ Chimichurri Sauce - South American Parlsey & Oregano Sauce 1 cup fresh parsley leaves, (packed) 1/4 cup fresh oregano leaves, (packed) or fresh cilantro leaves 1/2 cup olive oil 1/4 cup red wine vinegar 3 cloves garlic 1 teaspoon crushed red pepper flakes, (dried) 1/2 teaspoon ground cumin salt to taste 1 tablespoon shallot, minced Just before serving, combine all ingredients in a food processor and process until smooth. Sauce is served at room temperature. If sauce separates prior to serving, whisk to combine. Serve on the side with grilled [favorites] or vegetables. This sauce can also be used as a marinade.
