Guest guest Posted April 9, 2008 Report Share Posted April 9, 2008 Sugar-Glazed Peas With Radishes 1 1/4 pounds fresh young peas, shelled cooking spray 2 teaspoons butter 2 teaspoons sugar 4 young, pink-skinned radishes, well washed, tops and roots removed, sliced crosswise pinch of salt Place the peas in a steamer over boiling water until they are bright green, about 1 minute. Remove from steamer basket and pat dry. Spray a conventional skillet with cooking spray. Add the butter and place over medium heat. When the butter has melted, toss in the peas and sugar. Cook, shaking the skillet constantly, until the sugar is no longer granular, but has melted and the peas are starting to stick, about 2 to 3 minutes. Quickly add the radishes and the pinch of salt.
