Guest guest Posted April 6, 2008 Report Share Posted April 6, 2008 Gingered Cucumbers 1 large cucumber, peeled 3 scallions thinly sliced 2 tsps. grated fresh ginger 1 clove garlic, minced 1 tbsp. rice wine vinegar 1 tbsp. soy sauce 1 tsp. sesame oil 1. Halve the cucumbers lengthwise, scrape out seeds, and cut into 1/4 inch slices. 2. Combine with remaining ingredients and toss to combine flavors. 3. Garnish with mint leaves. Serves 4. You rock.
