Guest guest
Hi Carrie & welcome Eggplant has a very mild taste so it is great for absorbing the flavors of whatever you cook it with. Some recipes don't require peeling the eggplant such as eggplant parmesan but if you want to peel it there are a couple ways that are easy. One, cut off the stem and cut away the peel. Two, cut off the stem, cut the whole eggplant in half lengthwise, roast it until it gets soft, let it cool and scoop out the insides. I don't know which recipe you mean with the pine nuts but I highly recommend Julie's Moussaka recipe in the eggplant file. It is delicious and easy. hth, Peace, Diane , " Carrie " <jcptrucking wrote: > > I did see a recipe for eggplant, and I have really wanted to try > eggplant.
