I'm sharing a recipe that is always a crowd pleaser for appetizers! Cherry Tomato and Black Olive Crostinis 1 can black olives 1 package cherry tomatoes ~ 4 tbsp. Olive oil ~ 1 tbsp. Oregano Balsamic vinegar Handful fresh basil Rock salt Black pepper Garlic Parmesan or Asiago Cheese French or Italian bread Being a Jamie Oliver recipe, there aren't a lot of exact measurements - it's just a handful of this, a glug of that. It's really up to your tastebuds! - Squash tomatoes into a bowl. (Using your hands is easiest, but cover your hand with your other hand because the tomatoes will splatter. You can always cut them if you want.) - Squash olives into the same bowl. - Add the olive oil, oregano, vinegar, basil, salt, pepper and cheese into the bowl and mix. There's the topping! - Brush olive oil on slices of the bread, toast the bread, and then rub garlic cloves on one or both sides. Add topping to the slices, sprinkle some more cheese on top, and you're all done. - As a tip, if you have leftover toppings, it's great tossed in with some cold pasta.
