I think the origins of what we would call 'Scottish food' are linked mainly with people being very poor and therefore making do with what they had and trying to use absolutely everything.. Hence you would get things like haggis (which used everything practically) I agree with Christie though, nowadays in Scotland people don't really eat much of what would be described as Scottish as we have such a mix of food and food styles and cultures and I really wouldn't describe anything I've eaten as bland. In fact I would go as far to say that the only really Scottish food I would encounter in Edinburgh is haggis with neeps(rutabaga/yellow turnip) and tatties(potatoes), porridge (of course) or I guess a deep fried mars bar!
