Guest guest Posted March 26, 2008 Report Share Posted March 26, 2008 Poached Garlic Spread 1 head garlic 1/4 teaspoon salt 1 tablespoon olive oil 1/2 teaspoon balsamic vinegar 2 teaspoons herb of choice Break garlic head into cloves and cook in boiling water intil soft, about 20 minutes. Drain, remove skins and place cloves in mortar or blender. Add salt olive oil, vinegar and herb. Mix well, adjust seasoning to taste. Use as a spread for toast or crackers, mix into mashed potatoes or spread under the skin of a chicken or chicken breasts before roasting.
