Guest guest Posted March 25, 2008 Report Share Posted March 25, 2008 @@@@@ TOFU Carrot Nut MUFFINS 2 eggs 1 c. honey 1/2 c. cooking oil 8 oz. fresh tofu 2 tsp. baking soda 2 tsp. cinnamon 2 tsp. lemon juice 1 c. carrot, zucchini or apple finely chopped 1 c. nuts, chopped Mix in blender until smooth all above ingredients; transfer to a mixing bowl and add: carrot and nuts. Grease muffin pans or use paper cups, fill 1/2 to 2/3 full and bake at 325 degrees for 20 to 25 minutes.
