Guest guest Posted March 25, 2008 Report Share Posted March 25, 2008 @@@@@ Carrot Tofu Cake 4 1/2 cups finely shredded carrots 1 cup soft tofu, or silken tofu 3/4 cup applesauce 2 cups wheat flour 2 cups sifted brown sugar 2 teaspoons baking soda 1 teaspoon salt 1 teaspoon vanilla 1 teaspoon cinnamon 1/2 cup raisins Finely chop carrots in a food processor and sift brown sugar. Blend tofu, applesauce, flour, sugar, baking soda, salt, vanilla, and cinnamon. Stir in carrots and raisins. Pour into pan and bake for 45 minutes at 350. Let cool completely and frost with Coconut Icing.
