Chili Powder, heat to taste 1 tsp. Ground Cumin Seed 1 tsp. Oregano 2 cups canned crushed tomatoes 1-1/2 cups vegetable stock 3/4 tsp. salt (optional), or to taste 1/4 lb. white corn tortilla chips, coarsely broken, about 2 cups 1 cup shredded cheddar cheese 1 cup salsa, heat to taste Preheat oven to 325°F. Combine stock, onion, and garlic in a heavy nonstick skillet over medium-high heat. Bring to a simmer. Cover, reduce heat to medium low and sauté 5 minutes, or until onion is softened. Stir in next 7 ingredients. Bring to a boil, mixing thoroughly. Reduce heat to medium low. Cover and simmer about 10 minutes, stirring occasionally. Stir in tortilla chips. Sprinkle with cheese. Bake 10 minutes or until cheese is melted. Serve with salsa. Serves: 4 Preparation time: 10 min., Cooking time: 25 min.
