Guest guest Posted March 24, 2008 Report Share Posted March 24, 2008 Here's the chocolate chip cookies made with barley flour that I have found to be a huge hit at bake sales: http://www.kingarthurflour.com/shop/recipe.jsp?recipe_id=1155057786454 Here are my comments/modifications: - I do use the espresso powder -- it gives an added depth - I grind my own barley - The first time I made these, I didn't have enough semi-sweet chocolate chips, so I made a serendipitous modification. I used about 1 cup (or a bit more) of semi-sweet chocolate chips (though I also love it with bittersweet), 1 cup of milk chocolate chips and 2/3 cup (or a bit less) of white chocolate chips. YUM YUM YUM - I bake them a bit less than recommended. 8 or 9 minutes gives a nice chewy cookie. - I started making these for a bake sale and a double batch is now requested -- nay demanded -- every week.
