Guest guest Posted March 24, 2008 Report Share Posted March 24, 2008 Sweet Potatoes with Dates Dressing: 1 tablespoon balsamic, red wine, or raspberry vinegar 2 tablespoons olive or vegetable oil 1/2 teaspoon salt 1/2 cup chopped dates 1/2 cup toasted slivered almonds 1 1/2 pounds sweet potatoes, peeled and cut into 1-inch cubes Dressing: In a mixing bowl, combine the ingredients, then set aside. In a large saucepan fitted with a steamer, place the potatoes and steam for 7 to 10 minutes or until just tender. Do not overcook.
