Guest guest Posted March 23, 2008 Report Share Posted March 23, 2008 Whole Wheat Pizza Dough 1 package dry yeast 1 1/4 cups water, 100-degrees F. 1 1/2 cups whole wheat flour 2 cups unbleached flour 1 tbsp. olive oil 1 tbsp. honey 1/2 tsp. salt Add yeast to warm water and allow to sit for 15 to 20 minutes. In a food processor, add both flours, yeast, oil, honey, and salt. Pulse to combine ingredients. Process until the dough begins to form a ball. Remove the dough and place in an oiled bowl. Turn the dough to coat with oil. Cover and let rise in a warm place for about 1 hour. Dough should be doubled in volume Punch the dough down and transfer to a floured surface. Knead the dough briefly and divide into 2 equal pieces. Roll each piece into a 12-inch circle. Transfer to a floured or cornmeal-coated pizza peel.
