Guest guest Posted March 22, 2008 Report Share Posted March 22, 2008 We are celebrating tonight and I have been in my kitchen since 3am I took 2 hrs out to go feed my Mom and I'm not logged into the computer at all. Here is what I made. Asparagus with herbs and a very lite touch of butter, Mexican rice, potato salad, mixed greens with a red wine balsamic vinegar dressing, sauteed hominy with herbs, onions, garlic and black beans a chocolate vegan cheesecake, a carrot cake, roasted red pepper hummus, guacamole, lotus roots glazed with teriyaki, oven roasted curried cauliflower, and condiments on the side as well as some Fry Chik but only one can. My dear friend in here, Judy sent me a case and I can't part with much lol. Oh yes and also a huge bowl of fresh fruit. Are we going to feast or what? Instead of my usual Lumberjack Slam, I opted for a veggie and cheese omelet. I thought I hated omelets but found out they're not half bad. Anyway, does anyone have any suggestions as to what I might possibly eat besides just the side dishes: mashed potatoes, carrots, asparagus and salad. I thought about cooking some Navy beans with veggies. Any suggestions would be appreciated....just a note- As a newbie I haven't quite worked up the courage to try tofu yet.
