Guest guest Posted March 22, 2008 Report Share Posted March 22, 2008 @@@@@ Mediterranean Kosher Eggplant Patties - Sepharadim 1 large eggplant, peeled and cubed 1/2 cup matzo meal 1 egg 1 onion, chopped finely Parsley, garlic powder, pepper and salt to taste Tomato Sauce Boil eggplant until very soft. Drain and mash in bowl. Add matzo meal, beaten egg, onion, and spices. Mix well. Form 3 " patties and fry in a little oil on both sides until light brown. Please bring the sauce to the seder in a separate container. Makes 12 patties.
