Serve with an oat muffin or eat as it. It's so good

it's like a dessert in a bowl so I will share with the

new dessert group too. You won't crave sweets after

you try this delicious recipe. It's a hot summer

favorite of mine.

Fruity Gazpacho

 

1 1/2 pounds ripe tomatoes, skinned

1 tablespoon lemon juice

1/2 pint vegetable stock

salt and pepper

1 small onion, finely chopped

1 4 " piece cucumber, chopped

1 yellow bell pepper, julienne

2 peaches, thinly sliced

1 apple, thinly sliced

4 tablespoons blackberries or other soft fruit

3 tablespoons parsley or cilantro, chopped (optional)

 

Blend the tomatoes and lemon juice until smooth. Stir

in the stock and season with salt and pepper.

Stir in the remaining vegetables and fruits. Cover and

chill for at least 1 hour to allow the flavors to

blend.

Just before serving, stir in the parsley if desired.

Serves 4.
