Guest guest Posted March 20, 2008 Report Share Posted March 20, 2008 We made this tonight, it was yummy. I didn't have marinated artichokes, used canned instead and we only used a little plain feta. I also added a few sliced mushrooms. (I don't remember where I got it - I don't think it was here...) Tomato, Artichoke & Herbed Feta Pasta 8 oz. linguine 1 Tbsp. olive oil 1 1/2 tsp. minced garlic 1 (14. 5 oz. can of diced tomatoes, drained 1 (12 oz. ) jar marinated artichoke hearts, reserve marinade 1/4 cup water 1 (4-oz.) pkg. crumbled herbed feta cheese Cook linguine according to package directions. Drain Meanwhile, heat oil in large skillet over medium heat until hot. Add garlic, saute about one minute, stirring so as not to burn garlic. Stir in tomatoes. Cook 5 minutes, stirring occasionally. Drain artichokes, reserving 1/4 cup of the marinade. Add artichokes to tomato mixture; cook 2 minutes. Stir in water and reserved marinade. Reduce heat to low; cover and simmer an additional 5 minutes or until mixture is bubbly and hot. Place linguine in a large shallow bowl. Add tomato-artichoke mixture; toss to combine.
