Guest guest Posted March 20, 2008 Report Share Posted March 20, 2008 @@@@@ Quick Rustic Mediterranean Sauce 1/4 cup olive oil 1/2 small yellow onion, chopped 1 tablespoon garlic, minced 1/4 cup dried tomatoes, chopped 1/4 cup roasted red peppers, chopped 1 cup good marinara sauce 1/4 cup golden raisins 1/4 cup Kalamata olives, chopped 1 tablespoon parsley, chopped Salt and pepper to taste In a small saucepot, sweat the onions in 1/4 cup olive oil over a medium-high flame. Add the remaining ingredients. Simmer about 15 minutes. It may be necessary to add a few tablespoons water to the sauce so that it dosn’t become dry. Season to taste with salt and pepper.
