Guest guest
Thanks for the tip about steaming artichokes longer! The one and only time I remember eating a FRESH artichoke, I HAD steamed it and followed (so I thought) the intricate directions for preparing and eating it properly. I was not impressed. I'd rather peel, steam and eat the tough " woody " lower stems of asparagus spears than to mess around with all the trouble that the fresh artichokes were then. On the other hand, I shop at a place called ALDI, which almost all the time has, in its limited stock of " gourmet " goodies, a couple different kinds of " jarred " artichoke hearts. Some come marinated in an oil-vinegar-herb sort of liquid; I don't like the " pickled " ones, as they tend seem too salty and/or too vinegar-y. The ones I LOVE are in just a plain, lightly salty liquid and cut into quarters. The jars are about 8 or 10 oz. in volume, and I eat them all myself, as DH isn't thrilled with them. They are good in almost anything--mixed into pasta sauce, chopped onto salads (my favorite), stirred into cheese sauce to top almost any cooked veggie or potato or cooked pasta or rice. I keep a couple of jars of those all the time and always have one in the fridge to grab out a few for something! One " chain " Italian restaurant that we have been to (the one in our town left, so we have to drive much farther now) has on it's " appetizer " list, not only that yummy " artichoke-cheese dip " stuff, but also they offer " deep fried artichoke hearts " . THAT is my pet " indulgence " of indulgences--the deep-fried ones! They remind me of fried green tomatoes, which I adore, and, in our part of the country, that's as close as I can get (in a restaurant, I mean) to the taste and texture of F.G.T's I HIGHLY recommend it! --Laura B., BIG fan of fried green tomatoes (and eggplant, mushrooms, zucchint, cauliflower, onion rings...) even though I can't eat many of them with out a lot of heartburn! Never miss a thing. Make your homepage.
