I really like the idea of having it prepared when friends are arriving at an uncertain time and deserve something wonderful to eat at the end of their trip. Thanks so much for sharing this recipe! Peace, Maureen ------- Fig and Pistachio Couscous Tue, 4 Mar 2008 08:13:02 -0800 (PST) keemamyah Desilva Fig and Pistachio Couscous 1 1/2 tablespoons olive oil 1 teaspoon salt 1 10 oz. box couscous 1 1/2 cups figs, thinly sliced 1 1/4 teaspoons ground cinnamon 1/4 teaspoon ground allspice 1/2 cup shelled pistachios, chopped 1/4 cup chopped green onions 1/4 cup thinly sliced fresh basil 1. Combine 2 1/4 cups water, oil and salt in medium saucepan; bring to boil. 2. Remove from heat; stir in couscous, figs, and spices. Cover; let stand until water is absorbed, about 5 minutes.
