Potato Comfort Food Sandwich (open face sandwich) repost

This is my comfort food sandwich.

 

" Potato Comfort Food Sandwich " (open face sandwich)

 

I large russet potato

1/3 cup sliced black olives

1 large tomato sliced

2 slices sourdough bread

vegan mayo or regular mayo

balsamic vinegar

salt & pepper

olive oil

saute some onions for the top (optional)

 

Peel and slice potato into rounds.

Boil slices until almost fork tender. Only takes a few

minutes.

Drain and let them cool down a little

Heat a little olive oil in skillet and fry potatoes

until golden brown on both

sides.

Salt and drain on paper towels.

Toast bread and spread with mayo.

Stack potato slices, olives and tomato on both slices

of bread. (Optional add some onions)

Drizzle a ittle balsamic vinegar over top and sprinkle

with pepper.

 

Make sure you have someone there to eat the other one

or you will eat them both.

Yum!!!!!

This is the kind of sandwich that makes me wish I was not

diabetic most of all.....I love potatoes. Oh, well.....just can't have

everything......I could make it without the potatoes and it would be,

I am sure, just as good! I love lettuce and tomato sandwhiches!

 

My mom used to tell me about taking fried potato sandwiches

to school when she was a little girl.....way ahead of her time,

my grandmother was!
