Counterfeit Tuna Salad

 

2 cups finely shredded carrots

1/2 small onion grated (about a heaping tblspn.)

1/2 cup finely chopped celery

2 Tblspns. sweet pickle relish

1 Tblspn. lemon juice

1/4 cup mayo or vegan mayo of your choice

salt & pepper to taste

 

In a medium bowl combine carrots, onion, celery and

relish.

In a small bowl combine remaining ingredients and mix

well. Add to carrot

mixture, mixing well. Chill several hours to blend

flavors.

 

Note: If you have kelp powder toss a sprinkle in, but

it's not necessary.

Serves 4 79 calories per serving.

If you eat dairy, you can make a variation of this recipe that is really good

by adding:

 

1 (8 oz. brick) of room temperature cream cheese

Add 1/2 cup (or more) toasted chopped pecans

Cut down a little on the lemon juice or delete it altogether.

Add a teeny-tiny amount of garlic powder

Add the mayo of your choice.....

 

Do not add the onion or the pickle relish....

 

Blend it, let it set in the fridge for several hours.....then spread this, not

too thick,

on a good whole grain bread that has been thinly sliced.......it

is SO good! Everytime I have made this for a wedding reception or shower,

it gets excellent reviews.

 

I even like to put it on homemade pecan bread....it has little pieces of

pecans

all though the bread. Hey....do you all think I like pecans? You are right!
