Guest guest Posted March 17, 2008 Report Share Posted March 17, 2008 @@@@@ Mediterranean Cheese Spread 8 ounces cream cheese, softened 1 package (4 oz.) crumbed feta cheese, with basil and tomatoes* 6 tablespoons butter or margarine, softened 1/4 cup sour cream 1 cloves garlic, minced 1/4 cup very finely chopped ripe olives 2 tablespoons finely chopped chives Assorted crackers and cocktail breads Celery sticks Cucumber or zucchini slices In large bowl, beat cream cheese, feta cheese and butter with electric mixer until smooth. Add sour cream and garlic; mix well. Stir in olives and chives. Chill. Fill icing decorator (or preferred tool) with spread. Attach tip; pipe spread onto crackers, celery sticks, cucumber or zucchini slices. *If desired, substitute 1 package (4 oz.) plain feta cheese, 1 teaspoon dried basil and 2 tablespoons finely chopped sun-dried tomatoes in oil. Makes about 2 cups.
