Whan making pasta the fresh pasta is best for the stuffed recipes such

as ravioli, lasagna cannelloni etc. Dried pasta holds its shape better

than fresh for things like spaghetti.

 

Dont forget to experiment with flavoured pastas such as beetroot and

pumpkin, just substitute the liquid for the beetrrot etc. I also love

black olive pasta and chop the black olives finely and add to the

pasta.

Thanks for the tips. I thought fresh was supposed to be best for everything.
