Bring to a slow boil 1 quart of whole milk Reduce heat and while stirring add 1 teaspoon of lemon juice or white vinegar. The mixture immediately begings to separate. Coagulated pieces from the liquid called " Curds and whey " . Srain the curds pressing pressing out the excess liquid with a wooden spoon. Guest guest Posted March 16, 2008 Report Share Posted March 16, 2008 When I make cottage cheese I use skim milk and I let the milk cool to 125 degrees before I add the vinegar. You might find you need to add more vinegar to separate the curds from the whey. After I rinse and break up the curd I like to add a splash of cream or half-n-half to the mixture. Yum! As a sidenote it is also easy to culture yogurt and even buttermilk! And making homemade mozzarella cheese is also easy. There are many recipies online for doing this. Temperature is the key. I do not drink/am allergic to milk, and I really miss eating cottage cheese with fruit!
