If you like feta cheese and marinated artichoke hearts and pasta, you should

like this one.

Tomato, Artichoke & Herbed Feta Pasta

 

8 oz. linguine

1 Tbsp. olive oil

1 1/2 tsp. minced garlic

1 (14. 5 oz. can of diced tomatoes, drained

1 (12 oz. ) jar marinated artichoke hearts, reserve marinade

1/4 cup water

1 (4-oz.) pkg. crumbled herbed feta cheese

 

Cook linguine according to package directions. Drain

Meanwhile, heat oil in large skillet over medium heat until hot.

Add garlic, saute about one minute, stirring so as not to burn

garlic. Stir in tomatoes. Cook 5 minutes, stirring occasionally.

Drain artichokes, reserving 1/4 cup of the marinade. Add artichokes to

tomato mixture; cook 2 minutes. Stir in water and reserved marinade.

Reduce heat to low; cover and simmer an additional 5 minutes or

until mixture is bubbly and hot. Place linguine in a large shallow bowl.

Add tomato-artichoke mixture; toss to combine. Sprinkle with crumbled

feta cheese and serving immediately. A nice flat bread is good with

this.
