I love fried rice, but what would I use to replace the scrampled egg beside anything tofu (I just can't handle tofu). Also, if anyone has some easy and great eggplant recipes I would appreciate it. I just bought a ton of veggies today and eggplant was one of them. In the past I was only frying them, but I'm wanting something a little healthier. It's delicious! hth & welcome to the group, Peace, Diane Moussaka Julie K. 1 pound eggplant, diced 1 large onion, halved and sliced 1/4 cup frozen apple juice 1 can garbanzo beans, drained and rinsed 1 can tomatoes, diced 1 garlic clove crushed 1 teaspoon ground allspice or to taste Place apple juice in non stick pan. Add eggplant, garlic and onion. Cook until onion and eggplant are soft and tender. Add tomatoes and allspice. Simmer until done, about 30 minutes. Serve with fresh whole wheat bread or pita.
