I take extra firm tofu and press all the water out of it, crumble and add a little Italian seasoning along with a touch of lemon juice and a few mashed capers. It's pretty good! My husband was stationed in Greece while he was in the Air Force and he said he ate a lot of feta cheese there, made locally, that was made from sheep's milk. I have never had that kind though.
