I used to eat feta but since I have cow's milk allergy

I sub in salads and dishes like this. I take extra

firm tofu and press all the water out of it, crumble

and add a little Italian seasoning along with a touch

of lemon juice and a few mashed capers. It's pretty

good!

Spare a thought for his back breaking work

Say a prayer for his wife and his children

The feta cheese I buy, which is a Greek feta cheese, is made

from goat's milk. My husband was stationed in Greece while

he was in the Air Force and he said he ate a lot of feta cheese

there, made locally, that was made from sheep's milk. I have never

had that kind though. Maybe you can find goat's milk feta.
