Once prepared, fluff couscous with a fork. Cool, uncovered, 10 minutes. Meanwhile, in large bowl, whisk together olive oil, lemon juice, oregano and red pepper flakes. Add cooled couscous, tossing to coat evenly. Gently stir in tomatoes and olives. Gently stir in cheese. Chill at least 2 hours before serving on lettuce leaves. 8 Servings Prep Time: 10 minutes Cook Time: 15 minutes Source: Near East Foods Formatted by Chupa BAbi: 03.11.08 *For spicier Giardiniera Salad, increase red pepper flakes to 1/2 teaspoon. Inspired by the spicy Italian condiment, this quick salad can be made mild or hot by simply adjusting the amount of red pepper flakes. ----- ______________________________\ ____ Never miss a thing.
