Cuban Couscous

1 Box of " Near East " Whole Wheat Couscous, 10 oz

1 15oz. Can of Black Beans, (drained and rinsed)

1 C. Diced fresh Papaya, or dried and hydrated

1 C. Shredded Spinach Leaves

1 Minced Scallion

2 T. Lime Juice

2 T. Olive Oil

1/2 tsp. Ground Cumin

1/4 tsp. Salt

1/8 tsp. Cayenne pepper

Garnish: 1/4 cup chopped smoked salted almonds (optional)

 

 

 

Prepare the box of couscous according to the package directions, omitting the

butter or oil; let cool 10 minutes.

 

Stir in the rest of the ingredients.

 

Transfer to serving platter and garnish with 1/4 cup chopped smoked salted

almonds.
